Happy National Cookie Day! As someone who loves both eating and baking cookies, this day was made for me. It even just so happens that my current favorite holiday song is “Bakin’ Cookies” by the Ellas. If you haven’t heard it, check it out. True story, I accidentally played it on my Alexa last year, and now I’m hooked.

It’s that time of year again in my next of the woods – Girl Scout Cookie time! Are you familiar with this tradition? Every year, the Girl Scouts in the states sell their delicious cookies outside of grocery stores and drugstores. There are many yummy varieties to choose from, and I know people who buy tons of boxes to stock up for the year. Clearly, Girl Scout cookies are very hard to resist! Is anyone else a fan?

My introduction to girl scout cookies came in the 1980s when I was a girl scout…actually I was a Brownie. Brownies are what young Girls Scouts are called in the United States, and it’s how girls get their start with the organization. I wore a little brown uniform and enjoyed collecting badges. Of course, my favorite time of year was Girl Scout cookie time, when I enjoyed eating cookies a lot more than selling them 😉

I wish I could say that I was a Girl Scout for all of my childhood, but it didn’t work out that way. I was just too much of a rule breaker to be a Girl Scout… or even a Brownie. I started a little mutiny among the Browines one day, and after that, I wasn’t really welcome in the troop.

Despite my sad parting with the Girl Scouts in my home town, I’m still a big supporter of them – and I love their cookies. I love their cookies so much that I wrote a quiz about them: What Girl Scout Cookie Are You? Give it a go, and let me know what you get!

I’m also curious to know how many members of the Blogthings family were scouts growing up. Did you also sell or eat cookies? I’m not sure how other Girl Scouts across the world earn money. In the US, Boy Scouts sell popcorn, which is also delicious… but not as good as cookies 😉

Cookies are pretty much my go to comfort food. I love all types of cookies – soft, chewy, dense, light, chocolate-y, peanut butter, fun, serious… That’s what makes a quiz like The Chocolate Chip Cookie Oracle so difficult for me. It’s hard for me to state a cookie preference because I love them all.

Healthy Blogthings Chocolate Chip Cookies

1/4 cup oat flour (or another flour, but we like oat flour at Blogthings)

6 tablespoons brown sugar (that’s also 3/8 cup)

3/4 teaspoon baking soda

1/4 tablespoon salt

1/2 cup nut butter (almond, hazelnut, peanut butter, cashew butter) are all good choices

2 tablespoons applesauce

1/2 teaspoon vanilla extract

1/4 tablespoon almond extract (optional, but I like to use it for any non-peanut butter nut butter)

1/2 cup chocolate chips (mini preferred – mini M&Ms are cool too!)

2 bowls and 2 spoons for mixing

Cookie sheet

Combine the dry ingredients (flour, brown sugar, baking soda, and salt) in the first bowl. Mix well.

Combine the wet ingredients (nut butter, applesauce, and extract(s)) into the second bowl. Mix well.

Mix the wet ingredients into the dry ingredients. Mix in the chocolate chips. Refrigerate the dough for two hours or overnight. The dough should be firm before you use it.

Preheat your oven to 350F.

Scoop the cookie dough out onto the cookie sheet in tablespoon sized balls. Flatten the balls a bit with the back of a spoon or knife (or clean hand!). Bake for 12 minutes, or until the cookies start to brown. Pull them out of the oven, and let them cool for a few minutes on the pan before transferring them to a rack.
