I am a huge muffin fan. Even though I want to be a morning person, I’m not there yet – and having healthy muffins around to grab is must for me. If I don’t get my muffin fix, there’s a chance I’ll eat something much worse for breakfast. While I know that muffins aren’t as good for me as a green smoothie, they’re better than a donut or handful of chocolate chips 😉

As a special treat, I’ve included one of our favorite “healthy muffin” recipes here at the Blogthings house. I’m a big fan of these muffins because they are packed with fruit, and they are partially made with a whole grain. They aren’t overly sweet, but they don’t taste too healthy either 🙂 Let me know if you make them!
Blogthings Orange Kissed Blueberry Muffins
3/4 cup milk (I do almond milk)
1 teaspoon orange juice
1 1/2 teaspoons ground flax seeds
1 cup whole wheat pastry flour
1 cup white whole wheat flour
2 teaspoons baking powder
1/8 teaspoon sea salt
1/2 cup unsweetened applesauce
1/2 cup honey (or other liquid sweetener)
1 teaspoon vanilla
1 teaspoon orange zest
1 cup blueberries
Preheat oven to 350 degrees.
Mix the milk, orange juice, and ground flax seeds together in a small bowl. Set aside.
Mix the dry ingredients (flours, baking powder, and salt) together in a large bowl.
Combine the wet ingredients (applesauce, honey, and vanilla) together in another bowl. Stir in the milk, orange juice, and flax seed mixture. Pour the wet ingredients over the dry and mix lightly. Fold in the berries and orange muffins. Mix as little as possible.
Bake in non-stick muffin pans until lightly browned, about 25 minutes.
