Cookies are pretty much my go to comfort food. I love all types of cookies – soft, chewy, dense, light, chocolate-y, peanut butter, fun, serious… That’s what makes a quiz like The Chocolate Chip Cookie Oracle so difficult for me. It’s hard for me to state a cookie preference because I love them all.

Healthy Blogthings Chocolate Chip Cookies
1/4 cup oat flour (or another flour, but we like oat flour at Blogthings)
6 tablespoons brown sugar (that’s also 3/8 cup)
3/4 teaspoon baking soda
1/4 tablespoon salt
1/2 cup nut butter (almond, hazelnut, peanut butter, cashew butter) are all good choices
2 tablespoons applesauce
1/2 teaspoon vanilla extract
1/4 tablespoon almond extract (optional, but I like to use it for any non-peanut butter nut butter)
1/2 cup chocolate chips (mini preferred – mini M&Ms are cool too!)
2 bowls and 2 spoons for mixing
Combine the dry ingredients (flour, brown sugar, baking soda, and salt) in the first bowl. Mix well.
Combine the wet ingredients (nut butter, applesauce, and extract(s)) into the second bowl. Mix well.
Mix the wet ingredients into the dry ingredients. Mix in the chocolate chips. Refrigerate the dough for two hours or overnight. The dough should be firm before you use it.
Preheat your oven to 350F.
Scoop the cookie dough out onto the cookie sheet in tablespoon sized balls. Flatten the balls a bit with the back of a spoon or knife (or clean hand!). Bake for 12 minutes, or until the cookies start to brown. Pull them out of the oven, and let them cool for a few minutes on the pan before transferring them to a rack.
